4 Classic Keto Lunches You Can Make Ahead

Keto diets are easy to follow when you have the right recipes to help you be super organised. These four Keto approved lunches are our favorites for making ahead and being super prepared for whatever the day brings. The one thing we don’t need to worry about is our diet with these perfect lunches waiting to be enjoyed in our work fridge.

Classic Tuna Salad

This yummy tuna salad makes enough for 2 servings.

Ingredients

10 oz. canned tuna

½ cup of mayonnaise of your choice. (We love kewpie Japanese mayo for this recipe!)

½ tablespoon of mustard

1 tablespoon of finely chopped red onions

2 tablespoons of finely diced dill pickles (you can substitute for relish or chutney)

¼ cup diced celery

Sea salt and freshly ground pepper to taste,

4 cups of romaine lettuce that has been coarsely chopped,

Instructions

In a medium bowl mix the tuna, mayonnaise, mustard, onion, pickles, celery, salt, and pepper together. Store in the fridge until lunchtime.

When lunchtime rolls around simply toss the tuna mixture with the romaine lettuce, and enjoy!

Smooth Shredded Pork & Sautéed Cabbage

This fabulous recipe makes enough for 3 servings

Ingredients

¼ cup beef tallow

1 small white cabbage sliced thinly

1½ teaspoons sea salt

½ teaspoon black pepper

3 cups of pulled pork

2-4 tablespoons of apple cider vinegar

Instructions

Heat the beef tallow in a pan over medium-high heat. Add the cabbage to the pan and season with the sea salt and black pepper. Sauté for 10-15 minutes, stirring occasionally until the cabbage is soft and slightly brown. Add the shredded pork to the pan to and cook on higher heat for 3-4 minutes to heat the pork fully. Remove from heat. Combine the cabbage and pork mixture with the apple cider vinegar in another bowl. Seperate into 3 dishes to store in fridge for easy reheating at lunch time.

Turkey Breast Soup

This easy to make soup is perfect for reheating at lunchtime. This recipe makes 2 servings.

Ingredients

3 tablespoons of beef tallow

½ lb. turkey breast, cut into bite-sized chunks

1 teaspoon of ginger, minced

1 clove garlic, crushed

½ onion, diced

½ cup diced celery

4 cups chopped kale, packed

3 cups chicken stock or broth

¼ teaspoon of dried basil

¼ teaspoon dried oregano

½ teaspoon sea salt

Freshly ground black pepper, to taste

2 tablespoons MCT oil

Instructions

Heat the beef tallow and turkey in a large saucepan. Cook on medium for 7-10 minutes, until the turkey is cooked through

Add the ginger, garlic, onion, celery, and kale. Cook for another 5 minutes

Add the remaining ingredients except for the MCT oil. Cover the pot and bring to a boil. Reduce heat and simmer for 15-20 minutes

Remove from heat and cool before storing in the fridge ready to reheat for lunch. When you are ready for lunch reheat in the microwave and add the MCT oil.. Stir together and enjoy

Lunchtime Quesadilla

Make these delicious lunchtime treats the day before and simply reheat at lunchtime and serve with some sour cream. Delicious!

Ingredients

1 tablespoon of extra-virgin olive oil

1 bell pepper, sliced

1/2 onion, sliced

1/2 teaspoon of chilli powder

Kosher salt to taste

Freshly ground black pepper to taste

3 cups of shredded white cheese

3 cups of shredded cheddar

4 cups of shredded chicken 

1 avocado, thinly sliced

1 green onion, thinly sliced

Sour cream, for serving 

Instructions

Preheat oven to 400º and line two medium baking sheets with parchment paper.

In a medium skillet over medium-high heat, heat oil. Add pepper and onion and season with chili powder, salt, and pepper. Cook until soft, 5 minutes. Transfer to a plate. 

In a medium bowl, stir together cheeses. Add 1 1/2 cups of cheese mixture into the center of both prepared baking sheets. Spread into an even layer and shape into a circle, the size of a flour tortilla.

Bake cheeses until melted and slightly golden around the edge, 8 to 10 minutes. Add onion-pepper mixture, shredded chicken, and avocado slices to one half of each. Let cool slightly, then use the parchment paper and a small spatula to gently lift and fold one side of the cheese “tortilla” over the side with the fillings. Return to oven to heat, 3 to 4 minutes more. Repeat to make 2 more quesadillas.

Cut each quesadilla into quarters. Store in the fridge until lunch time. Reheat in oven or microwave. Garnish with green onion and sour cream before serving. Enjoy!
